淺談餐飲業排油煙系統的設計及監測油煙應對方案

摘要:基于工(gong)程(cheng)案例,闡述排(pai)油(you)煙(yan)系統(tong)風(feng)(feng)量的(de)(de)確定(ding)、計(ji)算方(fang)(fang)法、排(pai)油(you)煙(yan)系統(tong)的(de)(de)設(she)備選(xuan)型、排(pai)油(you)煙(yan)管(guan)道路系統(tong)的(de)(de)設(she)計(ji)、送風(feng)(feng)系統(tong)的(de)(de)確定(ding),針對不同的(de)(de)項目(mu),通過綜合比較(jiao)、反復(fu)論證(zheng),選(xuan)擇合理的(de)(de)方(fang)(fang)案。

0引言

       餐(can)(can)飲(yin)行(xing)業(ye)遍及購(gou)物商場、商業(ye)街,隨(sui)著新零售業(ye)的誕生(sheng),近年來許多超市也提供餐(can)(can)飲(yin)等熱加工服務。中餐(can)(can)主(zhu)要以(yi)炒、炸(zha)為主(zhu),油(you)煙(yan)量大,廚房內排(pai)油(you)煙(yan)效果(guo)差(cha),排(pai)油(you)煙(yan)系(xi)統(tong)漏油(you)、滴油(you)現(xian)象是(shi)排(pai)油(you)煙(yan)系(xi)統(tong)存在的主(zhu)要問題(ti)。本文結(jie)合工程經(jing)驗(yan),從(cong)設(she)計的角度出發(fa),就排(pai)油(you)煙(yan)系(xi)統(tong)的設(she)計要點(dian)進行(xing)分(fen)析。

1排油煙系統風量的確定

       排(pai)油(you)(you)煙(yan)系(xi)統(tong)的(de)設計階段應(ying)合理劃分排(pai)油(you)(you)煙(yan)系(xi)統(tong)、確定排(pai)油(you)(you)煙(yan)量。

       《飲食(shi)建筑設計(ji)(ji)規范》規定:廚房和飲食(shi)制作間(jian)的(de)熱(re)加(jia)工間(jian)機械通風(feng)的(de)換(huan)氣量(liang)宜按熱(re)平(ping)衡計(ji)(ji)算(suan),計(ji)(ji)算(suan)排(pai)風(feng)量(liang)的(de)65%通過排(pai)煙(yan)罩排(pai)至室外,而(er)由(you)房間(jian)的(de)換(huan)氣排(pai)出35%。通風(feng)排(pai)風(feng)量(liang)宜根(gen)據廚房的(de)熱(re)平(ping)衡計(ji)(ji)算(suan),由(you)于設計(ji)(ji)資料不足,往(wang)往(wang)無(wu)法(fa)計(ji)(ji)算(suan),在實際工程中主要根(gen)據換(huan)氣次數法(fa)進行估(gu)算(suan)。

       排油(you)煙量(liang)計算案例如圖1所示。關于排煙罩(zhao)排風量(liang),技術資料給出了兩(liang)種計算方法,取大值,舉(ju)例計算排煙罩(zhao)的(de)排風量(liang)。

       (1)方法一,按式(1)計算。

       L1=1 000×P×H =1 000×(1.2+1.2+12.8)×1=15 200m3/h (1)

       式中(zhong),P為排(pai)煙罩的(de)周(zhou)長(不計靠墻側邊長);H為排(pai)煙罩口(kou)到(dao)灶面(mian)的(de)距離,單位m,按相關(guan)技術規(gui)定,其取值一般不應大于1m。

       (2)方(fang)法(fa)二,按罩口斷面(mian)的吸風速不(bu)小于0.5m/s計算(suan)如式(shi)(2)。

       L2=3 600×12.8×1.2×0.5=27 648m3/h (2)

       若排煙罩四邊均不靠墻(qiang),按方法(fa)一重新計算排煙量(liang)如(ru)式(3)。

       L1=1 000×P×H =1 000×(1.2+1.2+12.8+12.8)×1 =28 000m3/h (3)

       這種情(qing)況下按方法一計(ji)(ji)(ji)(ji)算(suan)雖然(ran)比(bi)方法二大,但(dan)數(shu)值(zhi)上差距(ju)并(bing)不(bu)(bu)大,對實(shi)際(ji)風機設備(bei)選用(yong)的(de)影響不(bu)(bu)大,因(yin)此在(zai)實(shi)際(ji)工程的(de)排油煙計(ji)(ji)(ji)(ji)算(suan)中,大多(duo)數(shu)情(qing)況是不(bu)(bu)再經(jing)過兩次計(ji)(ji)(ji)(ji)算(suan)比(bi)較,直接選用(yong)方法二來確(que)定煙罩排煙量(liang),結合實(shi)際(ji)的(de)排煙效果,在(zai)方法二的(de)計(ji)(ji)(ji)(ji)算(suan)取(qu)值(zhi)中,宜按吸風速不(bu)(bu)小于0.6m/s計(ji)(ji)(ji)(ji)算(suan)。

(3)按換氣次數法確定通風排風量如式(4)所示(shi)。

       L=A×H×n=47×3×60=8 460m3/h (4)

       式中,A為房(fang)(fang)(fang)間面積,單位m2,此處(chu)是指爐灶(zao)間面積;H為房(fang)(fang)(fang)間凈(jing)高,單位m,廚(chu)房(fang)(fang)(fang)一(yi)般設置吊(diao)(diao)頂,此處(chu)吊(diao)(diao)頂下凈(jing)高取3m;n為換(huan)氣次(ci)(ci)數(shu),單位次(ci)(ci)/h,不同的規模、業態對(dui)應的廚(chu)房(fang)(fang)(fang)換(huan)氣次(ci)(ci)數(shu)不一(yi)樣,此處(chu)取60次(ci)(ci)/h。

       以上(shang)舉例中,僅計(ji)(ji)(ji)算(suan)(suan)廚房內其(qi)(qi)中一個(ge)排(pai)(pai)煙(yan)罩的(de)(de)排(pai)(pai)風(feng)量(另外兩(liang)個(ge)排(pai)(pai)煙(yan)罩并未詳(xiang)盡計(ji)(ji)(ji)算(suan)(suan)),其(qi)(qi)排(pai)(pai)風(feng)量已遠大于(yu)按換氣次數(shu)計(ji)(ji)(ji)算(suan)(suan)的(de)(de)通(tong)風(feng)排(pai)(pai)風(feng)量。當下商業租賃面(mian)(mian)積(ji)較小,廚房的(de)(de)現狀更多的(de)(de)是面(mian)(mian)積(ji)小,卻(que)聚集了大量炊事設備。值(zhi)得思考的(de)(de)是,土建(jian)設計(ji)(ji)(ji)初期,由于(yu)廚房資(zi)料(liao)不足,暖通(tong)若(ruo)僅按換氣次數(shu)來(lai)估算(suan)(suan)排(pai)(pai)油煙(yan)的(de)(de)話,豎井(jing)(jing)面(mian)(mian)積(ji)有可能遠遠小于(yu)二次深(shen)化時所需(xu)要(yao)的(de)(de)豎井(jing)(jing)面(mian)(mian)積(ji),選用的(de)(de)排(pai)(pai)油煙(yan)設備也無法滿足實(shi)際需(xu)求,因此土建(jian)設計(ji)(ji)(ji)初期應適當考慮足夠余量。

2排油煙系統的設備選型

2.1 排油煙風機的(de)選擇

       風(feng)機的選型包括(kuo)風(feng)量(liang)(liang)及風(feng)壓(ya),風(feng)量(liang)(liang)的確(que)定上文已有詳盡介紹,在設(she)備選型時宜按1.1-1.2的系(xi)數考慮;排油煙系(xi)統的阻力至少包括(kuo)以下(xia)幾項。

       (1)排煙(yan)罩、油(you)煙(yan)凈化(hua)器等設備阻力(li),排煙(yan)罩阻力(li)一(yi)般由廠(chang)(chang)家提供,在缺(que)省數據時可(ke)按(an)250-300Pa考(kao)慮;油(you)煙(yan)凈化(hua)器的(de)阻力(li),不同(tong)凈化(hua)效(xiao)率及不同(tong)的(de)廠(chang)(chang)家凈化(hua)器的(de)阻力(li)有所(suo)區別,目前市(shi)面上的(de)油(you)煙(yan)凈化(hua)器中,凈化(hua)效(xiao)率為90%時,其(qi)阻力(li)一(yi)般為150Pa左(zuo)右。

       (2)排(pai)(pai)油(you)煙風(feng)(feng)(feng)管及閥門等(deng)系(xi)統(tong)(tong)(tong)阻(zu)力(li),應進行具體風(feng)(feng)(feng)力(li)計算,應注意的(de)是排(pai)(pai)油(you)煙系(xi)統(tong)(tong)(tong)排(pai)(pai)放的(de)是油(you)煙,管道(dao)內壁易積油(you),積油(you)后運動黏度變大(da),從而使摩擦系(xi)統(tong)(tong)(tong)變大(da),較同等(deng)風(feng)(feng)(feng)量(liang)下同等(deng)尺寸的(de)一般通風(feng)(feng)(feng)系(xi)統(tong)(tong)(tong)沿(yan)程阻(zu)力(li)要大(da)。

       由(you)此(ci)可(ke)見,排油(you)(you)煙(yan)系(xi)統(tong)(tong)(tong)中僅排煙(yan)罩及油(you)(you)煙(yan)凈化器的阻力就已(yi)達450Pa,因(yin)此(ci)一(yi)般的排油(you)(you)煙(yan)系(xi)統(tong)(tong)(tong)保守估計(ji)至(zhi)少600 Pa以上,若(ruo)系(xi)統(tong)(tong)(tong)較(jiao)大,管道較(jiao)長,阻力更大。另外排油(you)(you)煙(yan)風機應(ying)選電機外置型(xing)。

2.2 油煙凈化(hua)器的選擇

       油煙(yan)(yan)凈化(hua)器選型主要考慮油煙(yan)(yan)處理量(liang)及(ji)凈化(hua)器效率,當凈化(hua)器與風機(ji)一起設(she)(she)(she)置(zhi)(zhi)在屋頂等遠(yuan)離廚房排煙(yan)(yan)罩(zhao)的(de)(de)位置(zhi)(zhi)時(shi),凈化(hua)器處理量(liang)宜與排油煙(yan)(yan)風機(ji)風量(liang)一致,若油煙(yan)(yan)凈化(hua)器緊靠排煙(yan)(yan)罩(zhao)設(she)(she)(she)置(zhi)(zhi)時(shi),可按照排油煙(yan)(yan)量(liang)計算取值。選擇(ze)油煙(yan)(yan)凈化(hua)設(she)(she)(she)備時(shi),應根據其(qi)設(she)(she)(she)置(zhi)(zhi)的(de)(de)位置(zhi)(zhi)與周圍(wei)環境的(de)(de)關(guan)系,選擇(ze)是否帶除異味(wei)功能(neng)的(de)(de)凈化(hua)器。

3 排油煙管道路系統的設計

       (1)排(pai)氣罩(zhao)頂部支(zhi)(zhi)管按喉(hou)部風速4~5m/s設計(ji),同一排(pai)氣置支(zhi)(zhi)管接口(kou)尺寸應(ying)宜相同,支(zhi)(zhi)管宜采(cai)用(yong)不銹鋼制作。支(zhi)(zhi)管上(shang)要(yao)設置密閉式對開多葉(xie)調(diao)節(jie)閥,同一排(pai)煙(yan)(yan)罩(zhao)中,系(xi)統前端(duan)(duan)的排(pai)油(you)煙(yan)(yan)量(liang)較(jiao)末(mo)端(duan)(duan)的排(pai)油(you)煙(yan)(yan)量(liang)大得多,支(zhi)(zhi)管上(shang)的多葉(xie)調(diao)節(jie)對調(diao)整(zheng)系(xi)統風量(liang)平衡,確(que)保(bao)末(mo)端(duan)(duan)支(zhi)(zhi)管排(pai)油(you)煙(yan)(yan)效果起著(zhu)至關重要(yao)的作用(yong)。

       (2)主(zhu)(zhu)風(feng)(feng)管(guan)上的風(feng)(feng)速(su)宜取8~10m/s,近(jin)年來也有不(bu)少(shao)工程實例指出,主(zhu)(zhu)管(guan)風(feng)(feng)速(su)宜提高到11~12m/s,這樣子能減少(shao)管(guan)道的油(you)(you)污積聚,提高排油(you)(you)煙管(guan)道系統的自凈能力。但風(feng)(feng)速(su)過大(da)必將導致系統運行噪聲(sheng)變大(da),筆者認(ren)為,當(dang)油(you)(you)煙管(guan)室內管(guan)段(duan)較長且安裝位置靠近(jin)人(ren)員主(zhu)(zhu)要活動區域時,風(feng)(feng)速(su)不(bu)宜過大(da)。

       (3)風管(guan)宜短、直(zhi)、少彎,并設(she)有(you)不小于(yu)2%的坡度坡向排(pai)水點或排(pai)煙(yan)(yan)罩,當(dang)油(you)煙(yan)(yan)管(guan)與其他管(guan)道水平相叉時(shi),應盡(jin)量(liang)避免排(pai)油(you)管(guan)翻(fan)越(yue)其他風管(guan),無法避免時(shi),盡(jin)量(liang)上(shang)翻(fan),當(dang)出現排(pai)油(you)煙(yan)(yan)管(guan)下翻(fan)時(shi),應在(zai)下翻(fan)的較低處設(she)清掃口(kou)。排(pai)煙(yan)(yan)罩須有(you)集油(you)槽及放(fang)油(you)管(guan),排(pai)油(you)煙(yan)(yan)管(guan)道較低處設(she)清掃口(kou),油(you)煙(yan)(yan)管(guan)道每6~8m設(she)置一處檢修(xiu)口(kou),以(yi)便(bian)后期維護。

       (4)排(pai)(pai)(pai)油(you)(you)煙(yan)(yan)風(feng)(feng)管(guan)(guan)(guan)的(de)(de)密(mi)封(feng)(feng)處(chu)理(li),排(pai)(pai)(pai)油(you)(you)煙(yan)(yan)系統較一般的(de)(de)通風(feng)(feng)系統的(de)(de)密(mi)封(feng)(feng)性(xing)能要求更高,按常規的(de)(de)風(feng)(feng)管(guan)(guan)(guan)加工制作(zuo)后,還應(ying)對風(feng)(feng)管(guan)(guan)(guan)內部(bu)(bu)進行(xing)相關的(de)(de)密(mi)封(feng)(feng)處(chu)理(li),盡(jin)可(ke)能減(jian)(jian)少油(you)(you)煙(yan)(yan)泄漏。條(tiao)件(jian)允許的(de)(de)情況(kuang)下,油(you)(you)煙(yan)(yan)凈化器(qi)應(ying)盡(jin)量靠(kao)近排(pai)(pai)(pai)煙(yan)(yan)罩布置,減(jian)(jian)少未處(chu)理(li)油(you)(you)煙(yan)(yan)管(guan)(guan)(guan)段的(de)(de)長度;排(pai)(pai)(pai)油(you)(you)煙(yan)(yan)風(feng)(feng)機(ji)盡(jin)量靠(kao)近系統的(de)(de)后端設(she)置,使系統大部(bu)(bu)分處(chu)于負壓段;此外,不得采用直接利用土建豎井(jing)作(zuo)用排(pai)(pai)(pai)油(you)(you)煙(yan)(yan)管(guan)(guan)(guan)道,若(ruo)通過豎井(jing)作(zuo)為垂直排(pai)(pai)(pai)油(you)(you)煙(yan)(yan)管(guan)(guan)(guan)道時,要內襯鋼板。

       (6)排(pai)油(you)(you)(you)煙(yan)(yan)系統(tong)室外排(pai)放(fang)(fang)點應(ying)高(gao)(gao)空排(pai)放(fang)(fang)。《飲食業環境保護技術(shu)規范》規定:經油(you)(you)(you)煙(yan)(yan)凈(jing)(jing)化(hua)(hua)(hua)后的(de)油(you)(you)(you)煙(yan)(yan)排(pai)放(fang)(fang)口與周邊環境目標(biao)距離(li)不(bu)應(ying)小于20m;經油(you)(you)(you)煙(yan)(yan)凈(jing)(jing)化(hua)(hua)(hua)和(he)除異味處理后的(de)油(you)(you)(you)煙(yan)(yan)排(pai)放(fang)(fang)口與周邊環境目標(biao)的(de)距離(li)不(bu)應(ying)小于10m。目前市(shi)面上(shang)(shang)的(de)油(you)(you)(you)煙(yan)(yan)凈(jing)(jing)化(hua)(hua)(hua)設備凈(jing)(jing)化(hua)(hua)(hua)效率基(ji)本上(shang)(shang)都高(gao)(gao)達90%以(yi)上(shang)(shang),甚至(zhi)還有些性能(neng)較(jiao)好的(de)廠家(jia)凈(jing)(jing)化(hua)(hua)(hua)效率高(gao)(gao)達98%以(yi)上(shang)(shang)。僅從滿(man)足技術(shu)規范的(de)角度出發,采用高(gao)(gao)性能(neng)凈(jing)(jing)化(hua)(hua)(hua)設備來滿(man)足10m并不(bu)困難。但從人的(de)主觀感受來說,油(you)(you)(you)煙(yan)(yan)排(pai)放(fang)(fang)口不(bu)宜出現在人員(yuan)活動范圍(wei)內,高(gao)(gao)空排(pai)放(fang)(fang)是好的(de)選擇。對于設在裙(qun)房屋頂的(de)排(pai)油(you)(you)(you)煙(yan)(yan)井(jing),若裙(qun)房周圍(wei)是住(zhu)宅(zhai)或辦(ban)公(gong)樓,排(pai)油(you)(you)(you)排(pai)放(fang)(fang)口盡量遠離(li)住(zhu)宅(zhai)及辦(ban)公(gong)樓側(ce)。

4 送風系統的確定

       送(song)風(feng)系(xi)統設(she)計合理與否,直(zhi)接影響排油煙(yan)效果。對(dui)于大型廚房的(de)炊事(shi)操作(zuo),送(song)風(feng)系(xi)統的(de)氣流組織還將(jiang)直(zhi)接影響炊事(shi)過程。送(song)風(feng)系(xi)統的(de)設(she)計主要注意有(you)以下幾點。

       (1)送(song)(song)風(feng)系統風(feng)量(liang)(liang)的(de)確(que)定(ding),為確(que)保廚(chu)房處于負(fu)壓狀態,送(song)(song)風(feng)風(feng)量(liang)(liang)不宜過大(da),一般按照排(pai)油煙(yan)風(feng)量(liang)(liang)的(de)70%左右即可。若廚(chu)房設有空調(diao)新風(feng)或(huo)全空氣送(song)(song)風(feng)系統(空調(diao)送(song)(song)風(feng)量(liang)(liang)較大(da)時(shi)),可適當地減少送(song)(song)風(feng)量(liang)(liang)。值得注意的(de)是,地下廚(chu)房及地上密閉的(de)廚(chu)房,當使用燃(ran)氣時(shi),送(song)(song)風(feng)量(liang)(liang)應該考慮爐具在(zai)炊事過程(cheng)中所(suo)需要的(de)燃(ran)燒空氣量(liang)(liang)。

       (2)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)系統(tong)風(feng)(feng)(feng)(feng)口(kou)的(de)布(bu)置(zhi)(zhi)(zhi)。廚(chu)房(fang)(fang)(fang)(fang)的(de)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)包括崗(gang)(gang)位(wei)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)和房(fang)(fang)(fang)(fang)間(jian)(jian)直接送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)。是(shi)否設置(zhi)(zhi)(zhi)崗(gang)(gang)位(wei)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)主要根據排(pai)煙(yan)(yan)罩的(de)結構(gou)決定,一般(ban)(ban)情(qing)況(kuang)下,其寬(kuan)度為(wei)1200mm以上的(de)帶有崗(gang)(gang)位(wei)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)的(de)孔(kong)板(ban),寬(kuan)度小(xiao)于1200mm的(de)排(pai)煙(yan)(yan)罩不(bu)自帶崗(gang)(gang)位(wei)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)孔(kong)板(ban),這(zhe)種情(qing)況(kuang)下,送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)全(quan)部通過(guo)吊(diao)頂設百葉風(feng)(feng)(feng)(feng)口(kou)直接送(song)(song)(song)(song)(song)(song)至房(fang)(fang)(fang)(fang)間(jian)(jian)。采用頂送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)的(de)方(fang)式時(shi)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)風(feng)(feng)(feng)(feng)速(su)不(bu)宜(yi)過(guo)大(da),實際風(feng)(feng)(feng)(feng)速(su)宜(yi)小(xiao)于2.5m/s,送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)口(kou)布(bu)置(zhi)(zhi)(zhi)應(ying)結合廚(chu)房(fang)(fang)(fang)(fang)的(de)功績能布(bu)局,避免直接布(bu)置(zhi)(zhi)(zhi)在待傳菜區(qu)(qu)(qu),條件允許的(de)情(qing)況(kuang)下,宜(yi)分散多處(chu)布(bu)置(zhi)(zhi)(zhi)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)口(kou),且每個(ge)(ge)(ge)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)口(kou)都應(ying)有調節功能。上述主要針對封閉廚(chu)房(fang)(fang)(fang)(fang)區(qu)(qu)(qu),對于大(da)型的(de)美食廣場等(deng)以明檔(dang)為(wei)主的(de)開(kai)放式廚(chu)房(fang)(fang)(fang)(fang),送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)系統(tong)的(de)設置(zhi)(zhi)(zhi)應(ying)更為(wei)謹慎。這(zhe)種開(kai)放式廚(chu)房(fang)(fang)(fang)(fang)炊事的(de)另(ling)外一側直接面向客人,若加工(gong)區(qu)(qu)(qu)內設置(zhi)(zhi)(zhi)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)系統(tong),氣(qi)(qi)流組織(zhi)不(bu)合理的(de)話很容易導致(zhi)送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)把(ba)油煙(yan)(yan)吹至客人取(qu)(qu)餐區(qu)(qu)(qu)。因此(ci),送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)系統(tong)一般(ban)(ban)不(bu)宜(yi)設在加工(gong)間(jian)(jian)內,送(song)(song)(song)(song)(song)(song)風(feng)(feng)(feng)(feng)宜(yi)布(bu)置(zhi)(zhi)(zhi)在明檔(dang)外側取(qu)(qu)餐區(qu)(qu)(qu)內,又或是(shi)與整個(ge)(ge)(ge)美食廣場的(de)新風(feng)(feng)(feng)(feng)系統(tong)相結合,使整個(ge)(ge)(ge)氣(qi)(qi)流組織(zhi)是(shi)從就餐區(qu)(qu)(qu)流向明檔(dang)的(de)排(pai)煙(yan)(yan)罩處(chu)。

       (3)送(song)(song)風(feng)(feng)系(xi)(xi)統的除塵及(ji)冷熱預處理(li)。廚房(fang)送(song)(song)風(feng)(feng)系(xi)(xi)統在(zai)送(song)(song)至(zhi)操作間前都應(ying)該(gai)進(jin)行(xing)除塵處理(li),一(yi)般(ban)情(qing)(qing)況(kuang)下送(song)(song)風(feng)(feng)機前設中效過濾器即可(ke)。現在(zai)的廚房(fang)基本設有空調系(xi)(xi)統,若空調負荷已(yi)滿(man)足廚房(fang)負荷要求,夏季排油煙補風(feng)(feng)系(xi)(xi)統是(shi)否預冷處理(li)可(ke)根據實際情(qing)(qing)況(kuang)確定。若補風(feng)(feng)量不(bu)大,一(yi)般(ban)可(ke)不(bu)經過降溫直接(jie)送(song)(song)至(zhi)廚房(fang),若補風(feng)(feng)量較大,宜(yi)適(shi)當(dang)(dang)降溫后再送(song)(song)風(feng)(feng)房(fang)間。冬季嚴寒(han)及(ji)寒(han)冷地方廚房(fang)送(song)(song)風(feng)(feng),應(ying)適(shi)當(dang)(dang)預熱處理(li)。

       為了彌補現(xian)(xian)存餐飲行(xing)業(ye)在(zai)煙(yan)(yan)油監(jian)(jian)測(ce)(ce)上的(de)漏洞(dong),同(tong)時便(bian)利監(jian)(jian)管部門的(de)監(jian)(jian)察,安(an)科瑞油煙(yan)(yan)監(jian)(jian)測(ce)(ce)云平(ping)臺(tai)應運而(er)生。油煙(yan)(yan)監(jian)(jian)測(ce)(ce)模(mo)塊通過2G/4G與云端平(ping)臺(tai)進(jin)(jin)行(xing)通信和數據(ju)(ju)交互,系統(tong)(tong)能夠對企業(ye)餐飲設備(bei)的(de)開機(ji)狀(zhuang)態、運行(xing)狀(zhuang)態進(jin)(jin)行(xing)監(jian)(jian)控;實現(xian)(xian)開機(ji)率(lv)監(jian)(jian)測(ce)(ce),凈(jing)化效率(lv)監(jian)(jian)測(ce)(ce),設施停運告警(jing),待清(qing)洗(xi)告警(jing),異常告警(jing)等功能;對采集數據(ju)(ju)進(jin)(jin)行(xing)統(tong)(tong)計分析、排名(ming)等統(tong)(tong)計功能;較(jiao)之傳統(tong)(tong)的(de)靜電監(jian)(jian)測(ce)(ce)方案(an),更具(ju)(ju)實效性(xing)。平(ping)臺(tai)預留(liu)與其(qi)他應用(yong)系統(tong)(tong)、設備(bei)交互對接接口,具(ju)(ju)有(you)很好的(de)擴展(zhan)性(xing)。

5.1平臺結構

       平(ping)臺GIS地圖(tu)采集餐(can)飲油煙(yan)處理設(she)備(bei)(bei)運(yun)行狀態(tai)和油煙(yan)排放(fang)的(de)(de)濃度(du)數據,自動對超標排放(fang)及(ji)異常企(qi)(qi)業進行提示預(yu)警,監管部門(men)可迅速進行處理,督促餐(can)飲企(qi)(qi)業整改設(she)備(bei)(bei),并定期清洗、維(wei)護,實現(xian)減排環保,不擾民等(deng)目的(de)(de)。現(xian)場安裝監測(ce)終端,持續監測(ce)油煙(yan)凈(jing)化器(qi)的(de)(de)工作狀態(tai),包括設(she)備(bei)(bei)運(yun)行的(de)(de)電流、電壓、功率(lv)、耗電量等(deng)等(deng),同時結合排煙(yan)口的(de)(de)揮發(fa)性(xing)物質、顆粒物濃度(du)等(deng)進行對比分(fen)析,一旦排放(fang)超標,系統會發(fa)出(chu)異常信號。

       ■油(you)煙(yan)監測設備(bei)用來監測油(you)煙(yan)、顆粒物、NmHc等數據

       ■凈化(hua)(hua)器(qi)和風機配合對油煙進(jin)行凈化(hua)(hua)處(chu)理,同時對凈化(hua)(hua)設(she)備的電流、電壓進(jin)行監測

       ■設備通過(guo)4G網絡將采(cai)集的數據上傳至遠程云端服務器

5.2 平臺主要功能

(1)在線監測

       對油(you)煙排污數(shu)據的監(jian)測(ce)(ce),包括油(you)煙排放濃度,顆粒物,NmHc等數(shu)值采集監(jian)測(ce)(ce);同時(shi)對監(jian)控風(feng)機和凈化器(qi)的啟停(ting)狀態、運行數(shu)據進行監(jian)測(ce)(ce)。

(2)告警數據監測

       系統根據(ju)采集的油煙(yan)數(shu)值大小,產生對(dui)應的排(pai)放(fang)超標告(gao)警;對(dui)凈化(hua)(hua)器的運行數(shu)據(ju)分析,上傳凈化(hua)(hua)設備對(dui)應的運行、停機、故障等告(gao)警事件。

(3)數據分析

       運行時長(chang)分析(xi),離線(xian)分析(xi);告警(jing)占(zhan)比、排名分析(xi);歷史數據統計等。

(4)隱患管理

       系(xi)統對(dui)采集的告警(jing)數據(ju)分(fen)析(xi),產(chan)生對(dui)應的隱患記錄,派發、處理隱患,及(ji)時(shi)處理告警(jing),形成閉環(huan)。

(5)統計分析

       包括時長分(fen)析、超標分(fen)析、歷史數據、分(fen)析報告等模塊。

(6)基礎數據維護

       個人信息、權限維護,企業(ye)信息錄入,對應測點信息錄入等。

(7)數據服務

       數(shu)據采集(ji),短信提(ti)醒,數(shu)據存儲和解(jie)析。

5.3 油煙監測主機

       油煙監控(kong)主機(ji)是現(xian)(xian)場的管理設備(bei)(bei),實時采集油煙濃度探測(ce)器和工況傳感器的信(xin)號,進(jin)行數(shu)據處理,通(tong)過有線(xian)或無(wu)線(xian)網絡通(tong)訊(xun)將數(shu)據傳輸到服(fu)務器平(ping)臺(tai)。同時,對本(ben)地數(shu)據進(jin)行存儲,監控(kong)現(xian)(xian)場設備(bei)(bei)狀態,提供人機(ji)操作界面。

3.4 設備選型方案

注:雙(shuang)探頭適合(he)雙(shuang)排(pai)(pai)煙通道的場合(he),每路(lu)探頭監測(ce)1路(lu)排(pai)(pai)煙通道。

6 結論

分析表(biao)明(ming),影響排油煙(yan)效(xiao)果有諸多因素,排油煙(yan)系(xi)統(tong)(tong)的風量及管(guan)道阻力,油煙(yan)凈化(hua)器的處理量及效(xiao)率,排油煙(yan)管(guan)道系(xi)統(tong)(tong)的氣密閉性(xing),還有送風氣流組織等等。因此,我們在(zai)設計(ji)的過程(cheng)中(zhong)應考慮這(zhe)些因素,應針對(dui)不(bu)同的項目,通(tong)過綜合比較、反復論證,選擇合理的方案(an)。
